Ses amis l’incitent à plus d’audace, la rencontre avec Paul Bocuse sera déterminante. À peine formé par le grand toqué de Collonges qu’il prend ses aises au Domaine des Séquoias. Une demeure de 1840 qu’il entend respecter tout en lui donnant une écriture contemporaine. De même pour sa cuisine pour le moins habitée. As we go to press, there’s a rumour going the rounds that the Domaine des Séquoias near Bourgoin Jallieu might get a Michelin star. If so it would be well deserved. Eric Jambon spares no effort and runs the hotel and the restaurant with great skill. Not being from a gastronomic background, he brings a fresh eye to the business. As a child he was forever reading his mother’s cookery books. Later, as a computer buff and company director he showed a real flair for cordon bleu cookery, and his friends encouraged him to take the plunge. It was a meeting with Paul Bocuse that clinched the matter, but as soon as he’d completed his training with Bocuse he moved on to the Domaine des Séquoias. It’s a grand 1840 country house, and he wants to preserve its period charm while reviving it with contemporary features. Same thing with his cuisine. It’s well worth the detour to meet the man and discover the estate, which now has 14 new guestrooms with their successful blend of modern design and ancient stone.
